PRODUCTION AREA hilly and foothill area in the south of the province of Modena.
GRAPE VARIETIES: 100% Lambrusco Grasparossa.
VINIFICATION: destemming-soft crushing, cold maceration, and fermentation.
CONSERVATION: in steel, thermo-conditioned.
REFERMENTATION: in autoclave (Charmat method) at controlled temperature.
BOTTLING: isobaric, sterile at room temperature.
DURABILITY:to maintain its freshness, the wine should preferably be consumed within 15 months of the harvest. The high storage temperature accelerates the aging process.
ALCOHOL CONTENT: 11,0%. 10,5%. It has a residual sugar of about 10 g/litre.
SCENT: intense and complex, hints of vinous and herbaceous, of ripe berries such as blackberry and raspberry.
TASTE: dense and pleasant, full-bodied, and persistent, soft, and enveloping, however fresh, and pleasantly tannic. Balanced.
SERVING: 10-12ºC.
COMBINATIONS: goes well with first and second savoury dishes of the Emilia and Modena tradition. Particularly suitable with main courses based on game, such as wild boar and roe deer.
