PRODUCTION AREA the northern area of Modena, between the Secchia and Panaro rivers.
GRAPE VARIETIES: the grape production disciplinary provides for 60% Lambrusco di Sorbara and 40% Lambrusco Salamino. This wine is composed almost entirely of Lambrusco di Sorbara
VINIFICATION: destemming-soft crushing, immediate racking, and cold fermentation.
CONSERVATION: in steel, thermo-conditioned.
REFERMENTATION: in autoclave (Charmat method) at controlled temperature.
BOTTLING: isobaric, sterile at room temperature.
DURABILITY:to maintain its freshness, the wine should preferably be consumed within 15 months of the harvest. The high storage temperature accelerates the aging process.
ALCOHOL CONTENT: 10,5%. 10,5%. It has a residual sugar of about 10 g/litre.
PACKAGE: green “Emiliana Champagnotta” bottle, cork mushroom cap, 750ml; box of 6 bottles
COLOUR: light ruby red, almost rosé with lively hues.
SCENT: intense fruity, of ripe berries.
TASTE: fresh, of great elegance, persistent even if light.
SERVING: 8-10°C.
COMBINATIONS: table wine, it goes well with the fat Emilian cuisine. Finds a perfect match with traditional Modena Christmas dishes: cotechino with lentils and tortellini in capon broth.
