PRODUCTION AREA hilly and foothill area in the south of the province of Modena.
GRAPE VARIETIES: Emilian grapes, mainly Grasparossa and Salamino.
VINIFICATION: destemming-soft crushing, moderate maceration, and cold fermentation.
CONSERVATION: in steel, thermo-conditioned.
REFERMENTATION: in autoclave (Charmat method) at controlled temperature.
BOTTLING: isobaric, sterile at room temperature.
DURABILITY:to maintain its freshness, the wine should preferably be consumed within 15 months of the harvest. The high storage temperature accelerates the aging process.
ALCOHOL CONTENT: 10,5%. 10,5%. It has a residual sugar of about 10 g/litre.
PACKAGE: green “Emiliana Champagnotta” bottle, cork mushroom cap, 750ml; box of 6 bottles
COLOUR: lively ruby red.
SCENT: intense, floral, and fruity, of wild rose and raspberry.
TASTE: fresh, medium-bodied, persistent, soft, and pleasantly light.
