PRODUCTION AREA hilly and foothill area in the south of the province of Modena.
GRAPE VARIETIES: 85% Grechetto Gentile, 15% Trebbiano, and various native vines of the hilly area.
VINIFICATION: destemming-soft crushing, immediate racking, and cold fermentation.
CONSERVATION: in steel, thermo-conditioned.
REFERMENTATION: in autoclave (Charmat method) at controlled temperature.
BOTTLING: isobaric, sterile at room temperature.
DURABILITY:to maintain its freshness, the wine should preferably be consumed within 15 months of the harvest. The high storage temperature accelerates the aging process.
ALCOHOL CONTENT: 10,5%. 10,5%. It has a residual sugar of about 10 g/litre.
PACKAGE: green “Emiliana Champagnotta” bottle, cork mushroom cap, 750ml; box of 6 bottles
COLOUR: light straw yellow with greenish reflections.
SCENT: pleasant scent of white and exotic fruit, clean and delicate.
TASTE: Dense and pleasant, full-bodied, and persistent, very soft, fresh, and enveloping.
SERVING: 8-10°C.
COMBINATIONS: fish and not overly tasty first courses. Also excellent as an aperitif.
