PRODUCTION AREA hilly and foothill area in the south of the province of Modena.
GRAPE VARIETIES: 100% Grechetto Gentile. It is obtained from hand-picked grapes, a selection of our best Pignoletto grapes.
VINIFICATION: Soft destemming-crushing, immediate draining, cold fermentation in the absence of lees.
CONSERVATION: in steel, thermo-conditioned.
REFERMENTATION: in autoclave (Charmat method) at controlled temperature after resting on the lees for 2 months.
BOTTLING: isobaric, sterile at room temperature.
DURABILITY:to maintain its freshness, the wine should preferably be consumed within 15 months of the harvest. The high storage temperature accelerates the aging process.
ALCOHOL CONTENT: 11,0%. 11,0%. It has a residual sugar of about 8 g/litre.
PACKAGE: “Spumante Piave” bottle, cork mushroom cap, 750ml; box of 6 bottles.
COLOUR: light straw yellow with greenish reflections, brilliant.
SCENT: intense and pleasant, pleasant scent of white and exotic fruit, clean and delicate.
TASTE: Light, with a pleasant body, but quite persistent, fresh, and quite soft, with a pleasant sapidity.
SERVING: 8-10°C.
COMBINATIONS: excellent to serve as an aperitif, however it goes well with the whole meal, especially with fish-based dishes and not overly tasty first courses.
