Vines | 100% Trebbiano di Modena. |
Vinification | soft-pressing, immediate draining, cold fermentation without skin contact. |
Storage | refrigerated stainless steel silos. |
Second Fermentation | autoclaving (Charmat process) temperature controlled. |
Bottling | isobaric bottling, after sterile filtration at ambient temperature. |
Longevity | to be consumed preferably within 15 months after grape harvest in order to maintain its freshness. High temperature storage speeds up its ageing. |
Alcoholic Content | 10,5%. Shows a sugar residue of around 10g per liter. |
Packaging | bottle Champagnotta Emiliana green, 750 ml; sparkling wine cork; boxes of 6 bottles. |
Colour | light pale yellow, pleasantly sparkling. |
Fragrance | pleasant white and exotic fruit flavours, distinct and elegant. |
Taste | great freshness, intense and pleasant, medium bodied and persistent. |
Serving Temperature | 8-10°C. |
Advice | suitable for appetizers, fish and light savory main courses. Perfect with some of modenese traditional food like gnocco fritto and salami. Perfect also with salty and fish appetizers and first plates not extremely savory. |
